So, something a bit “funny” (listen, pandemics aren’t funny AT ALL, but the jokes life plays on you sure are) - as I was formulating this travel blog and plotting out all my work trips and fabulous vacations for the year, COVID-19 hit 2020 hard. So for the foreseeable future, instead of taking my whole self on vacation, I’m taking my tastebuds on vacation through new recipes and cooking adventures. New and easy/cheap recipes, I should say; making minimal grocery trips and sticking to my furlough budget calls for some creative cooking.

I hope these healthy, simple, and flavorful recipes provide inspiration for your culinary journey as well… even if you are just stuck in your same ol’ home kitchen like me.
